Longjing is called by its translation, Dragonwell tea. Dragonwell is a pan-fired roasted green tea variety from the Longjing Village in Hangzhou, Zhejiang Province of China. One of China's most beloved teas, this pan-roasted green tea is produced mostly by hand and is renowned for its high-quality delicious aroma, mellow floral flavor, and slightly sweet aftertaste.
Longjing tea leaves are roasted immediately after picking to stop the natural oxidation process implemented in producing black oolong teas. Pan-firing the leaves stops the oxidation process. Dragon Well produces a yellow-green color when steeped. Green teas are sensitive to temperature and steeping time. If not made correctly, the tea will turn astringent and bitter.
